System cleaning is important as it removes biofilm, stickies, deposits and material that can cause faults, holes and breaks in the sheet. This is normally done on shut down (though Chlorox can be done during production). Caustic, Acid, Chlorox (caustic free biofilm removal) will sanitise the system.
